Orange cake

This is a new recipe for me, but I just love citrus in cakes, so I figured I give it a whirl. The batter for this cake is quite soft, so treat it with care.

Please excuse the frosting spilling around the cake, I went a little too heavy on it.

Orange cake




















Ingredients:
2 oranges
4 eggs
3 dl sugar
2 dl melted butter (a little less than 200g)
3 dl flour
1 tsp baking powder
powdered sugar

Melt the butter and let cool. Butter and flour a rectangular cake mould. Zest both oranges, and squeeze the juice from one one of them (save the other one, we'll need it later).

Whip the eggs and sugar until fluffy and white, then add the cooled, melted butter, orange juice and zest.

Mix the flour and baking powder, and sift it into the mix. Gently fold the flour into the mixture.

Pour the mixture into the mould, and bake in the middle of the oven, at 180°C, for about 40 minutes. Check if it is ready by inserting a toothpick, it should come away clean.

Take the cake out of the mould and allow to cool.

Once the cake has cooled, juice the remaining orange and add powdered sugar to it, to for a frosting for the cake. Spoon the frosting over the cake and put into the fridge to set.
